“Asende shares his recipes for Majani ya Boga, Saladi Tomate, and Fufu”

Asende is a refugee from Tanzania who is now settled in Nashua, New Hampshire. He was born in Zaire, now called The Democratic Republic of Congo, and speaks Swahili and French. He and his family, his wife and 9 children, have been learning English since arriving in the United States about 3 years ago. When asked about his life in Africa, Asende reports that there is instability in his former country because of conflict on the continent and that his country was rich in resources, but the profit from those resources did not reach the everyday people. He believes all people need independence and he seeks peace in his new country. 

Asende is animated when he speaks about African food and shares that he can find many African foods and ingredients in Manchester, New Hampshire. He is reminded of home when he cooks recipes like fufu, made from lots of corn and cassava flour. Tell “Everyone who wants to cook African food, to contact me!”
